A pizza sticks to the peel at the worst possible moment, with the oven open and the dough already dressed. The reason is almost never the dough recipe, and the fix is almost never more flour.
It is condensation, not the dough
Dough that slid onto the peel cleanly can be welded to it ninety seconds later. Nothing about the dough changed in that time. What changed is the surface underneath it.
A peel sitting on a counter is at room temperature. A ball of dough that has been proving is usually cooler, and it is releasing moisture. Where the two meet, that moisture condenses into a thin film between the dough and the peel, and then the flour in the film hydrates into paste. That paste is the glue. It is the same mechanism that makes a cold glass wet on a summer day, happening in a place you cannot see.
Two things follow from that. The first is that time on the peel is the single biggest variable, and it is the one most people ignore while they arrange the toppings. The second is that the material of the peel decides how fast it happens.
Why metal is worse than wood here, and what a metal peel is for
Wood is a poor conductor and slightly porous. It sits closer to the dough's own temperature, so less condensation forms, and what does form has somewhere to go. Metal is an excellent conductor. It equalises with the room fast, holds a temperature difference against the dough for longer, and has nowhere for a film of water to escape to. A metal peel is genuinely more prone to sticking during preparation than a wooden one, and no amount of technique changes the physics.

Metal is thin, which is what you want at the moment of launch, because a thin edge slides under a dressed pizza without lifting it. Metal is also rigid and it comes out of a hot oven without charring, which is what you want for turning and retrieving. Those are two different jobs from the one it is bad at.
The way most people who cook a lot of pizza actually work is to build on something else and use the metal peel only to launch and retrieve. Build on a wooden board, on parchment, or on the back of a tray. Slide the dressed pizza onto the metal at the last second. Launch. The metal peel then stays by the oven for turning and for getting the pizza out, which is what it is shaped for.
Semolina, cornmeal, or flour
Whatever is between the dough and the peel has to keep rolling rather than dissolving. That is the whole test.
- Semolina. Coarser than flour and slower to absorb water, so it stays as separate grains under the dough for longer. It behaves like a layer of tiny ball bearings and it is what most people settle on.
- Cornmeal. Works on the same principle and is slightly coarser again. The cost is that it does not disappear in the oven. Excess cornmeal builds up on the oven floor or stone and shows up as hard black specks on the base of later pizzas, so it needs sweeping out.
- Plain flour. The default, and the worst of the three. It is fine enough to hydrate almost immediately into exactly the paste you are trying to avoid. It also burns faster than semolina at pizza temperatures.
In all three cases the amount is smaller than people think. A thick layer does not roll better. It packs, absorbs, and becomes a crust of its own.
The five seconds that decide it
- Do not dress on the peel. Or if you must, dress fast and launch immediately. Every extra second is more condensation. This one rule fixes most sticking on its own.
- Shake before you commit. Give the peel a short sharp shake before it goes near the oven. If the pizza moves, it will launch. If it does not move, it will not free itself on the way in, and the moment to fix it is now, with a corner lifted and a pinch of semolina underneath.
- Watch the wet toppings. Sauce to the edge, oily mozzarella, sliced tomato. Heavy and wet toppings press the dough down and add moisture from above. Weight is what turns a small stuck patch into a torn pizza.
- Keep the peel dry between pizzas. A peel that has just come out of a hot oven is warm and the next dough will condense on it faster. Wipe it and let it come down before the next one.
The honest limit
A metal peel will never be as forgiving during preparation as a wooden one. That is a property of the metal and we are not going to argue it away. If you build your pizza slowly, enjoy arranging it, and want one tool for the whole job, buy a wooden peel and accept that it will char at the edges and cannot be washed properly.
Ours folds, which is the reason it exists. A ten inch peel with a folding handle fits in a drawer rather than living propped against a wall, and for most home kitchens that is the difference between owning a peel and owning a peel you actually use. It is also ten inches wide, which suits a domestic oven and will not take a sixteen inch pizza. We would rather tell you that now than have you measure it after it arrives.
