Why we wrote this one properly

Every shop selling kitchen tools says the same four words. Premium. Durable. Food safe. Quality. None of them tell you what the thing is made of, how it fails, or what you are supposed to do on the day it starts looking tired.

So: four materials, what each one is, what each one cannot do, and the exact care that keeps it. Read it before you buy rather than after. If any of it puts you off, that is the page working.

Four materials, and what each one is for

The detail is below. This is the short version.

304 stainless

Squeezer and pizza peel. The chromium runs through the metal, not over it, so a scratch re-forms instead of rusting.

Solid bamboo

The lids. Real strips laminated through the full thickness, not printed veneer over board. The one wear part here.

Powder-coated steel

Butter dish base, bread box, watering can. Fused in an oven, not sprayed, so it takes knocks on a body panel.

Borosilicate glass

The cookie jar. Expands about a third as much as ordinary glass, so a temperature swing does not crack it.

304 stainless steel

The number is a recipe, not a marketing grade. 304 is roughly eighteen percent chromium and eight percent nickel mixed through the steel itself, not applied to the outside of it. The chromium reacts with air and forms a thin oxide layer across the whole surface. That layer is what does not rust. Scratch it with a knife, drag it across a stone counter, take a chip out of the edge, and the layer re-forms over the damage within minutes, because the chromium is still there underneath. There is no inside and outside. It is the same metal all the way through.

Now compare that with coated steel, which is what most cheap kitchen tools are. Ordinary steel, rusty by nature, with a hard shiny finish sprayed on top to hide it. That finish is the only thing standing between the metal and the water. One knock on a tile floor, one twist of a bottle opener, one year in a drawer with other metal, and it chips. Under the chip is bare steel and standing water, and rust does not start on the surface and work in. It starts at the chip and works outwards, under the coating, lifting it as it goes. By the time you can see it, it has been going for months.

No coating to chip. No plating to lift. No hidden steel to find the water.

The honest limit. Stainless is stain-less, not stain-proof. Leave lemon pulp sitting in the bowl overnight, or salty water drying in a corner, and you can get pitting and brown tea-staining. It is chloride and acid sitting still in one spot that does it, not the steel giving up. Rinse it and it will never happen to you.

Solid bamboo, and the board that pretends to be it

Solid bamboo is strips of the real plant, cut, dried, and laminated together through the full thickness of the lid. Look at the edge and you can see the strips continue into the piece. Sand a millimetre off the face and you are still looking at bamboo, in the same colour, running in the same direction.

The thing sold alongside it is printed veneer board. A layer of particle board or MDF with a photograph of wood grain laid over the top and sealed. It is lighter than it should be, it sounds hollow when you tap it, and the edge is the tell: the grain stops dead at the corner because the grain was printed, not grown. Get water into a chip in that seal and the board swells, and swollen particle board never goes back down. It is not a repair job. It is a bin job.

The honest limit, and it is a real one. Bamboo is a natural material and it is a wear part. It is not covered by our guarantee and we do not pretend it is. It will lift a little, it will pale in a sunny window, and it will dry out if you ignore it. It must be hand-washed. A dishwasher cycle is an hour of hot water and detergent stripping the oils out of it, and that will take years off a lid in a single evening. Wipe it, dry it, oil it now and then, and it will still be on your table in a decade looking older than it did. That last part is not a defect. Wood ages. It is meant to.

Powder-coated steel

In the butter dish base, the bread box body, and the watering can.

Powder coating is not paint out of a tin. The colour goes on dry, as a fine powder, held to the steel by an electrostatic charge, and then the whole piece goes into an oven where the powder melts and fuses into one continuous shell. No solvent, so nothing evaporates out of it and leaves it thin. It ends up thicker and more even than sprayed paint, and it stays put through years of being picked up, wiped, and put down again.

That is why it is on the outside of a bread box and not on the inside of a squeezer. On a body panel it takes the knocks. On a working edge it would be exactly the coating we spent the last section complaining about, which is why the squeezer does not have one.

The honest limit. It is still a surface. Drop a bread box corner onto a tile floor and you will chip it, and unlike the oxide layer on stainless, it does not heal. Keep the chip dry and it stays a cosmetic mark for the life of the thing. Leave it standing in water and it will not.

Borosilicate glass

In the cookie jar.

Ordinary drinking glass is soda-lime, and it expands far more than borosilicate when it warms. That is fine until one part of it warms faster than another, at which point the two halves are pulling against each other and it cracks. Borosilicate has boron in the mix and expands about a third as much, so a temperature swing does not tear it apart from the inside. It is the glass laboratories use, for that one reason.

It also does not hold onto smells, which is the whole argument for a glass jar over a plastic one. Plastic is porous enough to keep a memory of last month's ginger biscuits. Glass keeps nothing. And you can see what is in it, which is the only reliable way anyone has ever found to remember to eat the biscuits.

The honest limit. It is glass. It resists heat, not impact. Knock it off a counter and it will break, and borosilicate tends to break into pieces rather than crumbs, so sweep carefully and do not go looking with bare hands. If that worries you, put it at the back of the counter, not the front.

Care, material by material

Never leave lemon pulp or salty water sitting in it overnight. No bleach, no chlorine cleaner, no steel wool, no oven cleaner.
Solid bamboo Hand-wash in warm water. Dry it standing on edge so both faces breathe. Rub in food-safe mineral oil when it starts to look pale, roughly once a month. Never put it in the dishwasher. Never soak it, never leave it face-down in a wet sink, never store it in direct sun on a hot windowsill.
Powder-coated steel Warm soapy water and a soft cloth. Dry it. Deal with a chip the day you notice it: dry, clean, seal. Never use a scouring pad or an abrasive cream. Never leave it standing in water. Never take a chipped piece into the dishwasher.
Borosilicate glass Dishwasher, top shelf, or a soft sponge by hand. Distilled vinegar for hard-water cloudiness. Dry the silicone seal before the lid goes back on. Never scrub it with anything gritty. Never store it with the lid sealed on a damp interior. Never use it on a hob or under a grill.
Blades Wipe dry after every use. Store the lame with the blade covered. Change the blade the moment it drags. Never wash it in the machine. Never leave it wet in a drawer. Never test the edge with a thumb.

What will go wrong eventually, and what to do about it

The bamboo goes pale and feels dry

This is the most common one and it takes five minutes to reverse. The oils have washed out. Warm the lid slightly, rub food-safe mineral oil in with a cloth, leave it overnight, wipe off what has not soaked in. Do it on the first Sunday of the month and it never gets to the pale stage at all.

Small brown spots on the stainless

Almost never rust in the steel. It is usually iron carried in your tap water, or a trace of something acidic that sat there. Bicarbonate of soda made into a paste, a soft cloth, thirty seconds of rubbing along the grain, rinse, dry. If it comes back in the same spot every time, that is your water, not your squeezer.

A chip in the powder coat

It happens on a hard floor. Once the coat is broken the steel underneath can rust, so keep it dry and touch it in with a small dab of enamel if you care how it looks. The chip stays cosmetic as long as water is not sitting in it. On a bread box it will never spread. On a watering can, dry the inside after use.

The cookie jar goes cloudy

Hard water leaves a mineral film. Fill it with warm water and a cup of distilled vinegar, leave it an hour, rinse. It comes back clear. If the seal starts feeling tacky, wash it separately and let it dry fully before the lid goes back on.

The lame stops cutting cleanly

It will, and it should. The blade is a consumable, like a razor. That is how every lame ever made works. When the scoring starts dragging the dough instead of parting it, change the blade. The handle is the part you keep.

The peel hinge feels stiff

Flour and water make a paste, and the paste dries in the fold. Rinse it, work the hinge a few times under warm water, and dry it fully before it goes away. A folding hinge that lives wet is a hinge that stops folding.

White crust inside the watering can

Limescale, left behind as water evaporates. It is the mineral that was already in your tap water, not a fault in the metal, and it will build faster in a hard-water area. Half a cup of white vinegar, leave it an hour, rinse well. Do not scrape it: the coating is what keeps the can from rusting, and a scraped coating is a rusting can.

It just looks used

Ten years of marks on a bamboo lid, a dulled shine on a handle you hold every morning. There is nothing to fix here. That is what an object looks like when it has been kept instead of replaced, and it is the entire point of buying one.

Where the guarantee sits in all this

The lemon squeezer is covered for life. Everything else is covered for two years against manufacturing faults. Bamboo lids and boards are the exception, because a wear part cannot honestly carry a lifetime promise, and we would rather say that here than write it in small print later.
