How to keep sourdough for five days without a plastic bag

A good sourdough is stale by Wednesday in most kitchens. Not because the bread was bad, but because of where it spent the night.

What actually goes wrong

Bread does not just dry out. Two separate things happen to it, and they want opposite conditions.

The first is staling. The starch in the crumb recrystallises as it cools, pushing water out of the structure. The loaf feels dry even though the water is still in there. This happens fastest between 0 °C and 10 °C, which is exactly why the fridge is the worst place you can put a loaf.

The second is moisture loss from the crust. That is the one people try to fix with a plastic bag. It works, and it also traps the steam coming off the loaf, which turns a crisp crust to leather overnight and gives mould somewhere to start.

So you need a container that slows moisture loss without sealing it in. Not airtight. Not open.

What a bread box is doing

A bread box holds a small pocket of air around the loaf that reaches its own humidity and stays there. The crumb stops giving up water to the room. The crust still breathes, so it stays crisp rather than going soft.

This is why bread boxes have vent holes and why sealing them would be a mistake. Ours has them punched along the back edge where you do not see them.

Metal, wood, ceramic, or a bag: what the box is made of changes the result

The material is not a styling decision. Each one manages the same pocket of air differently, and the right answer depends on your kitchen more than on the bread.

  • Powder-coated steel. Holds humidity steadily and does not absorb any of it, so the loaf keeps what it gives off and the box stays the same from the first week to the fifth year. It also wipes clean, which matters more than people expect, because crumbs left in any box are what starts mould. The one thing steel does badly is temperature: put it above a radiator or in direct sun and the box warms faster than a wooden one would.
  • Wood. Absorbs some of the moisture the loaf releases and gives it back slowly, which buffers the swings nicely. The cost is that it holds on to the last loaf as well. Wooden boxes need to be dried out properly between loaves or they turn into a warm damp cupboard, and in a humid kitchen they are the likeliest of the three to grow something.
  • Ceramic or stoneware. The most stable of the three thermally, which is genuinely useful in a kitchen that swings between cold mornings and a hot oven. Heavy, breakable, and usually the most expensive for the same internal volume.
  • A cloth bag. Better than plastic and worse than a box. Linen breathes so the crust stays crisp, but it does not hold a pocket of air around the loaf, so the crumb keeps giving up water to the room. A bag is a good answer for a loaf you will finish tomorrow and a poor one for a loaf you want on Friday.

Where you put the box matters as much as which box it is

A bread box is managing a small volume of air, so anything that heats that air works against it. Staling speeds up as temperature rises above room temperature, and mould needs warmth as well as moisture. The two worst spots in most kitchens are directly above the oven, where the box takes every cooking session as a heat cycle, and on a windowsill in afternoon sun.

The best spot is an inside wall, away from the hob, out of direct light, and off the counter beside the kettle. None of this is dramatic. It is the difference between day four being good and day four being fine.

Five things that will actually extend the life of a loaf

  • Let it cool right through first. A warm loaf puts steam into the box and every hour of that shortens the loaf. Two hours on a rack, cut side up.
  • Store it cut side down on a board or directly on the box floor. The cut face is where moisture leaves fastest. Standing it on that face seals it against a flat surface.
  • Do not bag it inside the box. You get the worst of both: trapped steam and no air exchange.
  • Never the fridge. A loaf stales roughly six times faster at fridge temperature than at room temperature.
  • Freeze what you will not eat in three days, sliced, in one layer. Toast it straight from frozen. Freezing stops staling outright because the water cannot move.

Bringing a stale loaf back

Because staling is recrystallised starch and not lost water, heat reverses it. Run the loaf briefly under a tap, enough to wet the crust and no more, then put it straight onto the oven shelf at around 180 degrees Celsius, 350 Fahrenheit, for ten to fifteen minutes depending on size. The water on the crust turns to steam, the steam goes into the crumb, the heat melts the crystals back, and the crust re-crisps as the surface dries again.

It works properly once. The loaf goes stale again faster the second time, and by the third it is croutons. But a day-four loaf out of the oven this way is genuinely good bread rather than a rescue, and it takes fifteen minutes of oven time you were probably using anyway.

Freezing, in the detail that actually matters

Slice before freezing, always. A whole frozen loaf has to be thawed as a unit, and you have then committed to eating all of it, which is how a freezer loaf ends up thawed and refrozen and ruined. Sliced, you take what you want.

Freeze in a single layer first, on a tray, then bag the slices once they are solid. Bagged wet they freeze into a block. Get the air out of the bag: freezer burn is water subliming off the surface, and the less air in there, the less of it happens.

Toast straight from frozen, never thawed. A thawed slice has already begun staling again on the way to room temperature. A frozen slice goes from locked starch to hot bread without passing through the range where it can recrystallise.

The honest limit

A bread box will not give you a week. Real sourdough with no preservatives in it is at its best for three days and perfectly good for four or five. If a loaf is soft and springy on day seven, something in it is doing work that flour, water and salt do not do on their own.

What a box does is make days three, four and five worth eating instead of worth toasting. That is the whole job.
